Chow Mein

There are a lot of ways of cooking Chow mein or fried noodles. It can be cooked with red or white meat (pork, chicken).

  • 225g egg noodles.
  • 50g Parma ham or cooked ham, finely shredded.
  • 2 tsp light soy sauce.
  • ½ tsp sugar.
  • 3 tbsp finely chopped spring onions.
  • 2 tsp sesame oil.
  • 2 tbsp sesame oil.
  • 100g/4oz chicken breast, skinned.
  • 2½ tbsp finely chopped garlic.
  • 2 tsp dark soy sauce.
  • 50g mangetout, trimmed.
  • 1 tbsp Shaoxing rice wine or dry sherry.
  • ½ tsp salt.
  • ½ tsp freshly ground white pepper.
Chow Mein
For the marinade
  • 2 tsp light soy sauce.
  • 2 tsp Shaoxing rice wine or dry sherry.
  • 1 tsp sesame oil.
  • ½ tsp salt.
  • ½ tsp freshly ground white pepper.
    Cook noodles in a pan of boiling water, once they are done strain them, and then drain and plunged them into cold water and finally drain them again.

    Slice and marinate the chicken breasts. To marinate the chicken use light soy sauce, rice wine, sesame oil, salt and pepper in a small container. Leave the pieces of chicken stand for about 20 minutes.

    Heat the wok or big pan, once hot add oil, and then add the pieces of chicken. Stir-fry the mix for 2 minutes. Place it on the plate.

    Heat the wok again; add the rest of the oil. Add garlic and stir-fry for 15 seconds. Add the snow pea and ham and fry them for 1 minute. Add noodles, light soy sauce, dark soy sauce, rice wine, salt and pepper, the sugar and spring onions and continue stir-frying for two minutes.

    Add the chicken to the mix, and continue frying until the chicken is done.

    Stir sesame oil and serve while it is warm.
