Hot and Sour Soup

INGREDIENTS:
  • 4 cups chicken stock
  • 3 tablespoons water
  • 1 egg, lightly beaten
  • 1 teaspoon sesame oil
  • 4 dried shitake mushroom.
  • 5 dried wooden ear mushroom
  • 8 dried tiger lily buds
  • 1/3 diced bamboo shots
  • 1/2 (450 g) package firm tofu, cubed
  • 1/3 cup lean ground pork
  • 1 teaspoon soy sauce
  • 1/2 teaspoon white sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 2 tablespoons red wine vinegar
  • 2 tablespoons cornstarch
  • 2 tablespoons thinly sliced green onion
Hot and Sour Soup
PREPARATION:
Soak all dry ingredients, mushrooms and the lilyin in warm water. Once they are soaked, trim stems and slice the mushrooms. Then shred the tiger lily stems with your fingers.

Into a saucepan add the chicken stock, mushrooms, tiger lily buds, bamboo and the shredded pork, and then boil them. Cook for about 10 minutes over a low heat.

Combine in the soy sauce the following ingredients: sugar, salt, white pepper and vinegar. Add it cornstarch and 3 tablespoons of water and mix them. Add a little of hot soup to the cornstarch, then return it to the saucepan.

Cornstarch is essentially a highly processed carbohydrate. This food is also very low in Saturated Fat, Cholesterol and Sodium.

Heat the saucepan, add the bean curd and cooked it for 2 or 3 minutes. Before serving stir eggs with the mix, in order to do so turn off the heat. Serve each bowl of soup with scallions.
