Spring Rolls

Spring rolls is the name that describes rolls filled with different kind of vegetables and meat. They are widely-known in Asian countries and around the world.

INGREDIENTS:
  • 60 g dry soy vermicelli.
  • 4 beaten eggs.
  • 1 onion finely chopped.
  • 60 g mushroom drained and chopped.
  • 150 g small shrimp drained and chopped.
  • 500 g lean ground pork.
  • 2 tablespoon of vegetable oil.
  • 1 shredded carrot.
  • 60 g crabmeat.
  • 90 g bean sprouts.
  • 2 pinches ground black pepper.
  • 1 tablespoon soy sauce.
  • 3 tablespoons fish sauce.
  • 1 chopped clove garlic.
  • 20 rice wrappers (16.5 cm).
  • 1 quart oil for frying.
Spring Rolls
PREPARATION:
Soak the vermicelli in soy sauce then drain.

Mix the vermicelli, eggs, onion, mushrooms, shrimp, pork, vegetable oil, carrot, crabmeat, bean sprouts, pepper, soy sauce, fish sauce and garlic, in a bowl.

Moisten the rice wrappers with a damp tea towel, and then add 2 or 3 tablespoon of the vermicelli mixture to the wrappers. Roll the wrappers and let them stand for about 30 minutes.

Heat saucepan and add oil, once the oil is warm fry the rolls until browned.
